My Little Pony Castle Cake

Happy Birthday Katherine!
I cannot believe that I have a 6 year old daughter. She is so beautiful, kind, and loving. I am so blessed to be her mommy.
This cake was a group effort. I had about 6 of my friends come over and learn/help with the the cake. It was fun getting fondant and corn starch all over the place and sending everyone home with over-sugared children. They are a terrific group of ladies and it was fun to play!

This cake is a strawberry cake with butter cream frosting. The filling is strawberry. My daughter requested a pink and purple My Little Pony cake for her birthday this year. We used toy ponies at her request as well. A good friend of mine had given me the castle towers awhile back and at the last minute I decided that the cake needed a three-dimensional piece so I pulled out the towers and used some fondant to make a castle. Katherine LOVED it! The castle was the perfect addition and pulled it all together. All the girls at the party got to pick out a pony from the cake and take it home with them.

For those of you that I promised a fondant recipe to here it is.

Marshmallow Fondant

Original Recipe Yield 3 pounds (enough for a double layer 12" round

Ingredients

  • 1 16 oz package Marshmallows
  • 2 lbs powdered sugar
  • 4 TBS water
  • 1 TBS butter flavor (optional)
  • 1 TBS orange, almond, or other favorite OIL or ALCOHOL based flavoring.
  • Gel coloring as desired
  • Lard - for your hands

Directions

  1. Combine Marshmallows, 4 T water, and flavorings in a microwave save bowl. Cook for 40 seconds and stir. Repeat until it is melted (about 3 times). Cover your hands with Crisco or corn starch. Mix in all of the powdered sugar and knead until it a bread dough consistency, not sticky but not dry, ( about 5 minutes) adding 1 or 2 T of water if needed. If you find that your fondant is too sticky add a bit of powdered sugar. Refrigerate for at least 2 hours and then let it warm up to room temperature before using. I like to turn on my oven and set my fondant on top for an hour our so. It makes it just the right temperature. You can put it in the microwave for 15 to 30 seconds to warm it up a bit as well. You may add your color in at any point during the process. Note: your coloring goes in best if your fondant is at least body temp. warm.
  2. Use corn starch or powdered sugar to coat rolling surface, rolling pin and hands. Your fondant is done and it should be as easy as playing with play-dough. Have fun!
